The fried chicken cutlets for our fried chicken sandwiches get brined in buttermilk for 24 hours before we dredge, bread, and fry them till they’ve reached that optimal crispy-crunch. The fixins are your usual suspects—lettuce, tomato, pickle, onion—but that chimichurri mayo, which gives this solid sandwich a zesty zing, is decidedly not.
